Otis' White Beans & Rice
serves 8-10

32 oz. low sodium chicken broth
2 chicken breast
2 cups smoked sausage
2 cans white navy beans
1 1/4 cup rice
1 1/2 cup or 1 large onion chopped
1 cup celery chopped
1 cup green pepper chopped
juice of 1 lemon
1-2 cloves garlic minced
2-5 Tbsp of Spiceman Otis New Orleans Seasoning & Rub

1.  Add chicken, 3 cups chicken broth, lemon juice, and 3 Tbsp
     of Spiceman Otis New Orleans Seasoning & Rub to a
     Dutch oven or medium to large stock pot and braise (lid on)
     low heat for about 10 minutes.
2.  Add onion, celery, green pepper, and garlic and simmer an
     additional 10 minutes.
3.  Remove chicken and set aside to cool and strain vegetables
     reserving liquid.
4.  Place liquid back in pot and bring to a boil.  Add rice and reduce
     heat to low and simmer for about 15 minutes (lid on).
5.  Cut chicken and smoke sausage in to chunks and add to pot
     along with vegetables and beans (drain liquid from beans).
6.  Bring pot to a simmer and add more chicken broth until desired
     consistency is reached.  Taste and add more Spiceman Otis
     New Orleans Seasoning & Rub
if desired.  Simmer for about
     5 minutes.  Add salt to taste if necessary.

Spiceman Otis New Orleans Seasoning & Rub

2 Tbsp paprika
1 Tbsp garlic granules
1 Tbsp black pepper
1 Tbsp onion powder
1 Tbsp dried thyme
1 Tbsp dried oregano
1 tsp sea salt
1/2 tsp cayenne pepper
1/2 tsp chipotle powder



Jay Bird's Wings
serves 2-3

12-18 chicken wings
2 Tablespoons or 1 sample pack of Spiceman Otis Jay Bird's Seasoning & Rub

1.  Using a thin paper plate, sift Spiceman Otis Jay Bird's Wing 
     Seasonings & Rub over wings, pat gently, flip and repeat       
2.  Grill over medium heat using outdoor grill or bake in oven at 350
     degrees F in baking dish for 25-30 minutes.

Java Flank Steak
serves 4-6

2-3 lb. Flank Steak
1.5 cups Teriyaki Pinapple Marinade
2 Tbsp or 1 sample pack of Spiceman Otis Java Seasoning & Rub

1.  Three hours before cooking or the night before, in a medium size bowl add Teriyaki Pinapple Marinade and whisk in Spiceman Otis Java Seasoning & Rub.  Place meat in a 1 gallon zip lock bag, pour in marinade and refrigerate.
2.  Grill over medium high heat about 6-8 minutes per side or until meat reaches desired internal temperature (135 degrees F medium rare).  Slice meat thin at an angle or bias.

Can aslo substitute London Broil or top round.


Pork BBQ

Serves 6-8

2 lb pork butt
2 Tbsp or 1 sample pack of  Spiceman Otis Chipotle BBQ
Seasoning & Rub

1.  Using a thin paper plate, sift Spiceman Otis Chipotle BBQ Seasoning & Rub over meat, pat gently flip and repeat.  Place on rack in shallow pan and bake in oven at 225° F for 3.5-4.5 hours or until center of meat reaches 190° F.  Check temperature of meat at about 3 hours.  For smoker or charcoal grill (over indirect heat) add wet wood chips about every 30-40 minutes.  Cooking time may vary.

2.  When meat has reached desired temperature, remove from heat
and tear meat with two forks or chop with a clever.  Add sauce if desired.


Red River Chili

makes 4-6 servings in about 45 minutes

1/4 lb. ground pork
1/4 lb. ground beef
1/2 cup chopped onion
1/4 cup chopped red bell pepper
1/4 cup chopped green bell pepper
2 cups canned diced tomatoes
2 cups canned crushed tomatoes
1/2 cup red wine (Merlot)
1-2 cloves minced garlic
1 small can red kidney beans
1 small can black beans
2 Tbsp or 1 small pack of Spiceman Otis Red River Chili
Seasoning & Rub


1.  In a medium stock pot or Dutch oven brown meat, strain and remove, reserving 2-3 Tbsp of liquid for step 2.
2.  Add garlic, onion, pepper and sauté until onion becomes soft and opaque.  About 5-7 minutes.
3.  Return meat to pot and add all remaining ingredients but the beans.  Bring to a boil and reduce heat to low and simmer for about 20 minutes or until vegetables become slightly tender.
4.  Add beans and simmer 5 minutes.

I will be adding recipes periodically.  Some will include my seasonings & rubs.  Others will be ones that I think are worth sharing.  Any recipe should be thought of as a reference or an idea to create tasty food.  Ideas are meant to be built upon, manipulated, and experimented with… just like recipes.  Feel free to send me any good ones of your own and if I post them, I will include your name.
